It’s Mimi here, and today, I’m diving into one of my all-time favorite topicsāfood! But not just any food. Iām talking about the delicious, mouth-watering meals that have kept me smiling despite my dietary challenges. Being lactose intolerant and having texture issues with certain foods (looking at you, mushrooms and peppers!) has definitely made my culinary journey a bit more interesting. But guess what? I’ve found some pretty amazing alternatives that make my taste buds dance!
Letās start with the big oneācheese. Oh, how I love cheese. When I found out I was lactose intolerant, it felt like my world was crumblingācheese was off the menu! But then, I discovered the wonderful world of dairy-free alternatives. Whether itās a creamy vegan cheese sauce for my pasta or a tangy, dairy-free cheddar for my sandwiches, Iāve found ways to keep the cheesy goodness alive in my life. It took a while to find the right ones, but trust me, once you do, thereās no going back.
Speaking of things I love, letās talk curries! If thereās one thing that can make me forget all my dietary woes, itās a good curry. Iām obsessed with anything coconut-based, so naturally, Thai Green Curry and Katsu Curry are staples in my kitchen. The richness of coconut milk paired with the right blend of spices is pure magic. Iām always experimenting with different curry recipes, and I canāt wait to share some of my favorites with you.
Now, being African, Jollof Rice is close to my heart. But letās be realāit has to be made just right! When it is, thereās nothing quite like it. The burst of flavors from the tomatoes, onions, and spices is something I can never get enough of. And letās not forget about Jamaican Jerk Chicken and Rice and Peasāanother one of my all-time favorite comfort foods. The smoky, spicy chicken combined with the rich, creamy rice and peas is just unbeatable.
But life isnāt all smooth sailing in the kitchen. I have to get creative with textures, especially when it comes to mushrooms and peppers. Iām not a fan of how they feel in my mouth, so I always blend them into sauces and soups. This way, I get the flavor without the icky texture. Itās all about finding what works for you, right?
Lately, Iāve been struggling with low energy, and Iāve heard some buzz about the carnivore dietāyes, the all-meat diet! Itās supposed to be great for boosting energy, and Iām seriously considering giving it a try. Imagine an entire blog post detailing my carnivore diet adventureāif Iām brave enough to go for it! š
